Savory Quinoa 

Breakfast Bowl

Serves 1

 

Ingredients

  • 1/2 Avocado

  • 1/2 Garlic Clove, chopped

  • 5 Grape Tomatoes, halved

  • 1/2 Cup Fresh Spinach

  • 1-2 Eggs

  • 1/2 cup Cooked Quinoa

  • 1 tbsp Olive Oil

  • Salt & Pepper

  • OPTIONAL: Hot Sauce/Salsa

Directions

  1. Cook quinoa according to package directions (See notes)

  2. In a small saucepan, pour about a cup of water in as well as 1 egg and let it come to a boil with, reduce heat to a medium low boil for approximately 6-7 minutes. Remove eggs and place in an ice bath

  3. In same saucepan used for eggs, add olive oil, halved tomatoes and minced garlic and low heat and cook for 4-5 minutes or until tomatoes are roasted. Toss in spinach and remove from heat (spinach cooks fast!)

Assembly

In a bowl, add quinoa, soft boiled egg (cut in half) along with the tomato/spinach mixture. Top with sliced avocado, salsa or hot sauce. Enjoy!

Amandas Go-To Breakfast Sandwich

Serves 1

Ingredients

  • 1 Whole Grain English Muffin

  • 1 Egg

  • 4-5 Fresh Spinach Leaves

  • 1 Slice of Cheese (I use Vegan Chaos)

  • OPTIONAL: Slice of Tomato or Ketchup

  • OPTIONAL: Black Pepper, Crushed Red Pepper

Directions/Assembly

  1. Using a nonstick skillet, crack an egg in the pan and cook 2-3 minutes on both sides, cracking the egg so the yolk hardens. If needed, fold the egg in half knowing it will fit better on the muffin

  2. Toast English muffin to your liking

  3. On the last flip of the egg, place your spinach on the egg and top with cheese. Turn the heat off and cover with lid until cheese is melted

  4. Top with pepper, ketchup or tomatoes 

Tropical Protein Smoothie

Serves 1

Ingredients

  • 1/2 cup Frozen Mango

  • 1/2 cup Frozen Pineapple

  • 1/2 Frozen Banana

  • 1 tbs Tahini

  • 1 tbs Vanilla Protein Powder (I use Tropeaka)

  • 1 cup Water / Almond Milk / Orange Juice

  • OPTIONAL: add spirulina, collagen powder, ground flax/chia seeds or any other superfood to the mix that you'd like!

  • BLEND & SERVE!

Red Beet Egg on

Avocado Toast

Serves 1

Ingredients

  • 2 Pieces of Rye Toast

  • 1/2 Avocado

  • 1 Hardboiled Egg (I prefer Red Beet)

  • Sea Salt / Crushed Red Pepper

Assembly

  1. Spread avocado on both pieces of toast.

  2. Slice your egg in as many thin slivers as you can get and place on avocado toast.

  3. Sprinkle with sea salt or crushed red pepper.
