Vegan "Jambalaya"

Serves 6

Ingredients

  • 2 cups Fresh Baby Spinach

  • 1 Large Bay Leaf

  • 1 Carrot - shredded or diced

  • 2 Celery ribs, diced

  • 1 Green Bell Pepper, diced

  • 1 15oz can Kidney Beans

  • 1 Medium Onion, chopped

  • 1 (14.5oz) can Fire Roasted Petite Tomatoes

  • 1 cup Cooked Rice

  • 1 tsp Minced Garlic

  • 1/4 tsp Dill Weed

  • 1/4 tsp Oregano

  • 1/4 tsp Thyme

  • 1/4 tsp Parsley

  • 1/4 tsp Black Pepper

  • 1/4 tsp Cayenne Pepper

  • 1 tsp Paprika

  • 1 1/2 tsp Sea Salt

  • 1 TBS Worcestershire Sauce

  • 4 cups Vegetable Broth

Directions

  1. In a large stock pot, add chopped onion, bell pepper, carrot and celery; saute over medium heat until softened, approximately 7-9 minutes. Add a tablespoon of water if veggies begin to stick.

  2. Add minced garlic and sauce for 30 seconds. Add dry spices (NOT BAY LEAF) and sauce for 1 more minute.

  3. Add fire roasted tomatoes, veggie broth, bay leaf and bring to a boil. Immediately lower to a simmer. Stir well to incorporate all the ingredients. Cover with ah tight fitting lid and simmer for 15 minutes.

  4. After 15 minutes, add the kidney beans and Worcestershire sauce, simmer for 5 more minutes and discard the bay leaf.

  5. Add cooked rice and baby spinach. Cook for a few more minutes to gel it all together.

  6. Serve with hot sauce if preferred.

Bang Bang Cauliflower

Serves 6

Ingredients

  • 1 Head of Cauliflower

  • 2 Garlic Cloves

  • 1 cup Almond Milk

  • 1/3 cup Sweet Chili Sauce

  • 2 tsp Lime Juice

  • 1 tsp Soy Sauce

  • 1 tsp Sriracha

  • 1 cup Flour

  • 1/2 tsp Pepper

  • 1/2 tsp Salt

Directions

  1. Preheat oven to 450F and line baking sheet with parchment paper.

  2. Mix the flour, almond milk, salt and pepper until smooth in a small bowl.

  3. Dip each cauliflower into mixture, let any excess batter drip off then place on baking sheet.

  4. Bake 22-25 minutes flipping half way through.

  5. Mix all sauce ingredients together rand toss over cauliflower.

**You may also serve this over rice and have it as a meal - in that case, top with chopped green onion!**

Savory Vegan Pasta

Serves 4

Ingredients

  • 1/2 box of Angel Hair or Spaghetti Noodles

  • 1 TBS Minced Garlic

  • 1 TBS Olive Oil

  • 1/2 Crown Broccoli, broken into florets

  • 1 cup Cherry Tomatoes, sliced in half

  • 1 cup Artichoke Hearts, sliced

  • 1/4 cup Black Olives, sliced

  • Juice of 1 Lemon

  • 1 tsp Italian Seasoning

  • Fresh Basil

  • Salt and Pepper

Directions

  1. Prepare pasta according to package directions

  2. In a medium pan, heat olive oil at medium heat. Add garlic and broccoli and sauce for 3-5 minutes. Add tomatoes and sauce for another 3 minutes.

  3. Add artichoke hearts and olives and stir until everything is warm.

  4. Mix noodles with vegetables and drizzle with lemon juice, salt, pepper, Italian seasoning, basil and perhaps some additional olive oil.
